This month's cocktail is The Bombay Sapphire Collins. A unique spin on the classic Tom Collins, combining castor sugar and soda water with Bombay Sapphire's unique blend of 10 exotic botanicals, gives the Bombay Sapphire Collins a refreshingly smooth taste. It's the perfect cocktail for sitting back and relaxing, especially over summer.
What you'll need
Ingredients
45ml Bombay Sapphire Gin
A large lemon (25ml)
Juice of half a lemon
2 heaped teaspoons castor sugar
Lemon wedge for garnish
Soda water
Method
Squeeze the juice from half a large lemon (25ml) into a highball glass. Add castor sugar and stir to dissolve. Fill a glass with ice and add 45ml of Bombay Sapphire. Fill with soda water and stir really well. Garnish with lemon wedge
