Thai Prawn and Rice noodle salad
500grams prawns
2 bundles rice noodles
1 mango diced
½ pineapple diced
1 sliced spring onion
Handful each basil and coriander
4 finely sliced kaffir lime leaves
½ cup cashews
Soak rice noodles in boiling water until soft then rinse in cold water and drain.
Barbecue or pan fry in oil spray prawns until just cooked.
Place noodles on a serving platter and add all other ingredients on top then toss through dressing.

Dressing:
1 clove crushed garlic
¼ cup sweet chilli sauce
1 grated stick lemongrass
Juice of 2 limes
¼ cup fish sauce
2 teaspoons sesame oil
2 teaspoons grated ginger
2 teaspoons palm sugar
1 crushed red chilli
Mix together and add onto salad.
This Salad can be served warm or cold, top with slices of avocado and basil leaves.
