Smoky mustard marinated sirloin with crunchy roasted vegetables
My inspiration for this meal comes from a request – Thanks Ray. In fact, Ray has promised that he will make this meal for his wife Rochelle so good luck!
Most of the ingredients for this dish come from my new favourite place, The Good Food Trading Co on MacDonald Street, Mount Maunganui.
Jo and her team are extremely helpful and knowledgeable in all areas and what an extreme array of food, produce and share ‘foodie' delights to be had.
STEAK
Sirloin Steak (this beautiful cut was from The Good Food Trading Co)
Mustard Makers-Manuka smoked mustard
Marinate steak with mustard smeared over the top. Grill on barbecue or grill pan 3-5 minutes each side turning only once. Then rest in tin foil for five minutes.
MARINATED VEGETABLES
1 Red onion cut into wedges
1 diced eggplant
3-4 zucchinis thick sliced
½ broccoli florets
Handful beans
Place in a covered dish to marinate with this dressing:
2 teaspoons crushed yellow mustard seeds
2 teaspoons crushed pepper
4 cloves crushed garlic
Juice of 1 orange
1 teaspoon marmalade
Sea salt
1/3 cup olive oil
Shake all ingredients together and pour over veges and toss through.
Cook at 220-250C for 10 minutes stirring twice until browned, but still crunchy.
Place fresh spinach leaves on the plate, then vegetables and lay steak over the top. Enjoy!
