Chicken salad with a twist

Well with the beautiful summer days I thought I would make a nice fresh light citrus flavoured dish and again the ‘Good Food Trading Co' inspired me with this recipe.

Cous cous and chicken salad with lemon citrus dressing

1 cup cooked cous cous (that has been cooked in chicken stock)

2 zucchini sliced with vegetable peeler

2 chicken breasts cooked

½ cup mint leaves torn.

Toss chicken, mint, salt and pepper

Lemon dressing

Shake together-one tablespoon each of olive oil, lemon juice, raw sugar, lemon rind

To assemble, place cous cous on a plate then zucchini on top, followed by chicken and spoon over lemon dressing.
