Citrus mango pork with goats cheese

1-2 trimmed pork fillet 300-400 grams each
Sliced spinach
Handful of rocket torn
1 mango sliced
1 block goats cheese

Rub a quarter cup dressing over the pork fillet and marinate in fridge if you have time. Then heat barbecue or grill pan and sear all sides until brown and pop in oven on 200C for about 10 minutes. Take out and rest in tin foil for 10 minutes before slicing.

Place rocket and spinach on a plate and top with sliced mango and goats cheese, then place pork on top and follow with dressing below.

Dressing-Honey Citrus and Chilli

One third of a cup honey warmed

Zest and juice of 1 orange, lime and lemon

3 teaspoons grated palm sugar (brown or raw if you have none)

Three quarters of a cup olive oil

1 teaspoon Chilli Relish-optional (or sliced chilli)

Handful coriander leaves torn

Salt and pepper

Shake all ingredients together. The leftover dressing will keep well in the fridge and can be used to dress chicken or fish dishes.
