Polenta is such a delicious versatile product to work with and the Polenta ai Porcini (polenta with porcini mushrooms), just has that extra flavour punch.

Polenta is an excellent product for those who are gluten intolerant.
It is so quick to prepare. Simply pour into boiling salted water for five minutes and continue to stir. You can vary the thickness to your liking by altering the water quantity. Serve with grated Permigiano cheese and add a knob of butter. I used it as a crumb mixture to create an exquisite dish with white veal. Coat the veal lightly with seasoned cornflour, dip in beaten egg and crumb with the polenta mix. Totally divine.
