Chicken Cacciatore
6 chicken thighs (skin removed)
Olive oil
1/2 cup dry white wine
1 onion diced
3 bay leaves
3 crushed garlic cloves
1 Tbsp dried oregano
3 Tbsp black olives
2 carrots, diced
1 packet cherry tomatoes
1 can crushed tomatoes
1 tsp sugar
Salt and pepper
Method
Heat a non-stick pan – one that is transferable to the oven or have an oven dish ready to transfer into.
Pre-heat oven to 160 degrees. Brown chicken on both sides, remove from pan and set aside. Place onions in pan and cook until soft, place the chicken back in the pan and add the rest of the ingredients. Give it a stir and transfer to the oven. Bake covered with a lid or tin foil for 1hr 20 or until chicken is cooked through and sauce has reduced down. Serve with rice.
