Cajun Fish:
2-4 Pieces fresh fish (I used bluenose for this, but any will do)
Shake over the fish with a Cajun spice mix and pan fry with a spray of oil until golden brown and just cooked through.
Chilli yogurt sauce:
1 Cup Greek yoghurt
1 Cup chopped coriander
2 tablespoons chilli sauce
Mix together and keep chilled until serving time
Greek vegetable medley:
2 cloves garlic chopped
2 green chillies deseeded and chopped
1/2-1 red onion cut into wedges
20 beans
2 zucchini sliced
1 cup broccoli florets
1 cup cauliflower florets
8 baby carrots halved
Spray vegetables with olive oil and roast for 15 minutes on 250oc stirring 2-3 times so vegetables brown and Crispin on edges. Add in a handful of torn up spinach with five minutes remaining.
Take out of oven and toss through:
10-16 Kalamata or Greek olives
1/2 cup toasted sliced almonds
A handful of basil leaves
3/4 cup diced marinated (reduced fat) feta
1/2 lemon squeezed over
Drizzle of olive oil from marinated feta jar
Lay vegetables on plate and place fish to the side, serve sauce over fish or in a side dish for dipping. This dish has an amazing array of flavours so please enjoy.
