Always a favourite banana cake

As promised last week after the ‘LIFE Personal Fitness' Sports Day, I am going to print the banana cake recipe that I make. This recipe has been slightly adapted from my dear friend Steph's wonderful recipe she gave me last year. Please double this for a bigger cake to cater for the whole family.

Banana cake

1 cup brown sugar
2 Tablespoons butter
2 eggs
3 large mashed bananas
¾ cup white flour
¾ cup wholemeal flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 Tablespoon milk
2 Tablespoons yoghurt (mango and passionfruit if possible)

Cream Butter and sugar
Add eggs and beat well
Add bananas and sift over flours and baking powder
Fold on baking soda dissolved in milk and yoghurt.
Cook at 160C for 35-45 minutes.
I have topped mine with cinnamon and brown sugar or you can chop in chocolate or put chocolate buttons on the bottom of tin and cake mix on top.
