The most practical, amazing all rounded everyday useful cookbook in the world, is ‘Great Food for Busy Lives' by Annabel Langbein. This recipe is a mix of her wraps and my additives to make it a salad with a healthy saucy option.
Mexican Inspired Chicken Salad
400-500grams chicken tenderloins
1 onion finely diced
3 Tablespoons tomato paste
1 teaspoon crushed garlic
1 teaspoon cumin
1/3 cup sweet chilli sauce
1 Tablespoon each of chutney, soya sauce and balsamic vinegar
2 cups chicken stock
310g tin kidney beans
310g tin black beans.
Cut fresh coriander
Brown chicken in a pan and take out and cover. Dab off any fat with a paper towel.
Brown onion until soft and add garlic and cumin and stir fry for one minute.
Add rest of ingredients and simmer for 10 minutes.
Two Wheatmeal flour tortillas cut into squares-heat on 180C in an oven until crispy
lettuce shredded
spinach leaves
diced tomato
jalapenos
chopped fresh coriander
Yoghurt sauce
I cup Greek low fat yoghurt
1 sliced red chilli
½ - 1 teaspoon sambal Oelek
To Assemble:
Lay tortilla squares on a plate, top with chicken and salad ingrediants, then spoon over yoghurt sauce.
