Well we are now into week three of our 10 week LIFE Fitness Camp and have an amazing group of individuals all working hard to get fitter, slimmer and more toned. As a result, most people on camp are looking at their eating habits more closely and choosing a healthy eating plan to follow.
I have had numerous requests for breakfast options so I made this the other day to help with an easy to prepare low fat, but tasty breakfast option.
LIFE Fitness Camp Muesli
3 cups rolled oats
1 cup wheat germ (or 4 cups oats if you don't have)
1 ½ cups sunflower seeds
¾ cup sliced almonds
¾ cup slivered almonds
1 cup cashews
1 cup pumpkin seeds
1 ½ teaspoons cinnamon
1 ½ teaspoons ginger
1 ½ cups apple juice
½ cup honey
Heat apple juice and honey together to dissolve honey.
Mix all other ingredients in a large bowl and pour over apple juice and honey, stir until well mixed through.
Spread on a tray lined with baking paper and bake at 140-150C for about one hour, stirring a breaking up clumps 3-4 times. When golden and crisp take from oven and cool.
Can add any dried fruit you want also at this stage i.e. cranberries, raisins, sultanas, apricots etc. You can also substitute or erase any of the above ingredients if you do not like them.
You may also serve with fresh fruit and low fat Greek yoghurt!
