Delicious Low Fat Healthy Loaf

I hope everybody has had a great long weekend and although the weather has not been great it's given me time to find a nice low fat versatile baking recipe. This is so easy to make and freezes well so great to double batch and freeze whilst you are stuck inside due to rain.

Delicious Low Fat Healthy Loaf (thanks Maple)

2 Medium grated apples skin on (or equivalent carrots) 1 ½ cups
¾ Cup brown or raw sugar
½ Cup low fat yoghurt
Grated rind one orange
1 ¾ Cups flour
1 teaspoon baking soda, cinnamon and ginger
½ Cup each craisins and sultanas (or apricots, dates, raisins)

Put apple, sugar, yoghurt, egg and rind in a bowl.
Sift over dry ingredients and dry fruit and mix.
Put into greased loaf tin and bake on 170C for 40-50 minutes.
