Crispy Fish Morsels

Dawn hopes her passion and creative flare in the kitchen leads you to try these recipes – some new, some traditional and some all time favourites.

This recipe was a creation that I made up on Saturday night that I used as an entree for dinner guests. It can easily be adapted, however, to be served as a main course with a nice plain baby cos lettuce salad, tomato, cucumber, spring onion, green beans, (asparagus when in season) and plain brown rice with fresh lime juice and olive oil splashed over the top.

Crispy Fish Morsels

400-500grams fish cut on 2cm chunks
2 Tablespoons polenta
4 Tablespoons crushed cornflakes
1 Tablespoon sesame seeds
1 teaspoon lemon pepper
1 teaspoon Thai chilli and lime flakes

Place all ingredients in a plastic bag or tupperware marinating dish and shake gently until fish is well coated.
Heat a little rice bran oil in a fry pan on medium – high and place in fish and turn gently until cooked and crispy brown.
Easy, healthy, affordable and delicious – enjoy.
