Venison medallions with cranberry and thyme glaze
1x 400g packet venison medallions (refrigerated unit at Mount New World)
Toss venison in rice bran oil and cracked pepper and sea salt.
Pan fry for 2-3 minutes on a medium to high heat. Take out and rest in tin foil.
2x Tablespoons cranberry glaze
½ cup orange juice
2x teaspoons fresh cut thyme
Add above ingredients to pan and reduce down to a thick glaze and spoon over top of venison medallions.
Serve with steamed carrot and zucchini cut into batons placed on a bed of fresh raw spinach. If you need a carbohydrate option then an oven baked potato will suit this meal.
