This week's healthy recipe is more of an entertaining idea that I have put together whilst hosting my dear friend Rach to dinner. It is so simple, healthy, tasty and versatile; I will guarantee it will be a hit amongst all guests.
Salad
A bunch of fresh torn up rocket leaves, a whole fresh coriander plant, one Mango thinly sliced and fresh shavings of parmesan cheese. Lay all ingredients on a large white platter and add seafood on top then dress with a good olive oil and freshly squeezed lemon or lime juice.
Seafood
Saute fresh fish fillets (cut into big chunks) in a non-stick pan in rice bran oil and place on salad.
Toss a handful of prawns in the pan with some finely chopped chilli and garlic and sauté until cooked.
Add scallops to the pan if you have them and splash a little white wine over the top with some cracked pepper.
Calamari rings can also be added to this also.
If you are lucky enough to have crayfish in the freezer then boil this also and add.
I have added a side of Basmati rice.
Then the exciting part of this dish is all the little dishes of condiments that you can use to dress up any of the seafood as you so desire. I have used:
Toasted sour dough bread
Fresh lime pieces
Satay sauce
Boiled eggs
Artichokes
Marinated feta
Mayonnaise (lite) and chilli sauce mixed
Sun dried tomatoes and caper berries
Feijoa chutney
Pesto
Balsamic vinegar reduction
Baby gherkins and olives
The healthy food hint for the week
This is possibly the most common tip that is ever used, by far the cheapest and easiest to access, and yet still people don't adhere to it so here goes again...
Drink at least 6-8 cups of water a day. This obviously helps to hydrate you and can help prevent hunger by giving you a fuller feeling in between meals. Some experts claim it can increase your metabolic rate by 30 per cent. With another encouraging effect that the calories burned appeared to come from fat. Six cups= 50 calories burned!!!!
Your general wellbeing, skin and body will benefit amazingly from the added water intake.
