This salad recipe was inspired by a Peter Gordan meal and the Chickpeas are sensational.
1x manuka smoke chicken roast (MT New World-butchery)
Roast on 170C for 30-45 minutes then slice and add to top of salad.
Salad:
2x 450g tins chickpeas heated.
200ml olive oil
12 cloves garlic chopped
3x red chillies de seeded and chopped
3x red onions finely sliced
150 ml cider vinegar
1 cup each coriander mint and parsley chopped
1 cup crumbled feta
1 cup sliced spring onions
½ cup olive oil
Salt and pepper
Heat oil in a pan, add chilli, onions and garlic and cook over high heat five minutes stirring all the time.
Add vinegar and boil until evaporated about two minutes. Take off heat.
Add all ingredients and stir through and serve on a nice platter while still warm.
