This is a quick easy healthy salad to prepare. Prawns are a light meal option and very well priced as you can buy a bag of fresh frozen prawns that you could use over four meals from $10 a bag.

Thai style prawn salad
30 cooked prawns
1 large red chilli chopped and deseeded
1Tablespoon crushed garlic
1 tablespoon grated ginger
1 chopped tomato
2-4 chopped spring onions
1-2 avocados diced
½ cup crushed peanuts or cashew nuts
Dressing:
2 tablespoons fish sauce
2 tablespoons lime juice
6 Tablespoons olive oil
1 cup coriander leaves
Put all ingredients in a bowl and carefully mix watching not to mash the avocado.
Pour over dressing and stir through.
Serve with rice or cous cous and a green leafy salad on the side.
