Pasta Perfection

This is yet another tasty and exciting dish that Luis has given me the recipe for.

There are many various options and additives to this also:

2 cups cooked brown wheat pasta

1 red onion

2-4 cloves crushed garlic

2 teaspoons brown sugar

1 teaspoon dried coriander

Sauté onion and garlic in a little oil and add sugar and spices towards the end.


Stir through:

½ cup each of sun dried tomatoes, black olives, capers, feta cheese and parsley or basil.

Dress with: 1/3 cup olive oil, 1/3 cup balsamic vinegar, 1 tablespoon honey and 2 teaspoons grain mustard.

Serve with chicken or Fish and a nice green side salad. Bacon can also be added at the sauté stage for a non-vegetarian option!
