Biscotti
Ingredients
3 cups plain flour
100g butter, softened
1 cup of sugar
2 eggs
1 teaspoon baking powder
1 tablespoon orange rind
1 tablespoon lemon rind
1 teaspoon cinnamon
1 teaspoon nutmeg
½ cup toasted almonds
2 egg yolks, to brush
To be added at the end if you would like to add chocolate and cherries:
1 cup of dark chocolate, cut into chunks
1 cup of glazed cherries
Method
Preheat oven to 160 degrees Celsius. Mix sugar and butter until light and fluffy. Add eggs and beat for a further three minutes. Add your dry ingredients, lemon and orange rind, and nuts if you wish. If you would like to add chocolate and cherries, this is the time to do that. Mix well.
On baking paper, make two rolls of dough. Flatten and cut through with a knife to make the indent. Brush with egg yolk and bake for 30 minutes. Remove from stove and cut the strips and turn pieces onto their side. Then slow bake on 120 degrees Celsius for a further 40 minutes.
