Pappa's Fish
(Snapper in an Italian Red Sauce)
Olive oil
1 large onion, chopped
2 garlic gloves, crushed
1/2 cup black or green olives
Handful of capers
1 teaspoon oregano
1/4 cup white wine
1/2 cup water
4 pieces of snapper
1 can of tomatoes
Italian flat leaf parsley
Salt and pepper
Heat oil in a deep pan. Sauté onion. Add garlic, olives, capers. Add can of tomatoes, wine, water and oregano. Simmer on low for 20 minutes until it reduces down. Place each snapper filet in the sauce, cover with a spoon and simmer for a further 5 minutes. Taste for flavour and add salt and pepper. Remove from heat and place a lid on top of the pan. This will finish the cooking of the fish. Before serving, sprinkle with flat leaf parsley. This dish is lovely served with steamed rice and fresh seasonal vegetables.
