I have to say fish is definitely the family dish in my household.
We are so lucky in New Zealand that we are excisable to snapper! I cooked these in tin foil on the barbecue and they were divine! Next time you get a snapper, scale it, add your dressings and you are away. Too easy!
Ingredients
1 snapper
Juice of two large lemons
1 red onion, sliced thinly
2 garlic gloves
5 tablespoons olive oil (Lupi light)
A handful of capers
A handful of parsley
1/2 cup sherry or white wine
Balsamic reduction
Method
Place a good amount of tin foil on a tray so that the juices don't run out. Mix all the ingredients, except the balsamic reduction, in a dish. Stuff the snapper with half of the ingredients and the other half pour over the top of the snapper. Drizzle with balsamic. Seal the tin foil and cook on the barbecue on a low heat until cooked.
