Don't you just love summer?
It's a good time to take it easy in the kitchen, or better yet have lots of barbecues, as most men love to take over the cooking then. All we women have to do is make the salads.
I love kumara and mixing all the colours I can find. I made this salad in no time and just kept adding whatever I had spare in the fridge.
Lupi Light Olive Oil to drizzle
5 mixed coloured kumara, chopped into chunks
2 oranges, chopped into chunks
1 large avocado, chopped
3 slices of bacon (optional)
1 can chickpeas, washed and drained
2 tbsp mayonnaise
Juice of one orange
Fresh coriander
Preheat oven to 180 degrees Celsius. Drizzle kumara with olive oil, season with salt and pepper, and bake until golden. Once cooked, place the bacon over the top and place back in the oven for further five minutes. Remove from oven, stir and mix through the rest of the ingredients. It's that easy!
