This week's recipe needs no introduction, other than to say give this one a go – it's delicious!

Zucchini and corn fitter
With ham and sunflower microgreens
Gluten-free, serves two

Ingredients
2 courgettes
1 corn cob
30-50g shaved ham
A few mint leaves
A small handful sunflower microgreens
1 egg
Salt and pepper
1 Tbsp mayonnaise
1 Tbsp Edmonds gluten-free custard powder

Method

Boil the corn cob for about five minutes, meanwhile grate courgettes and place them in colander to drain season with little salt. Once you've cooled down the corn, de-husk the kernels with a sharp knife. Place in a bowl with the drained courgettes, salt and pepper and chopped mint. Whisk up the egg with the custard powder. Add this to the mix, and fry off in suitable sized blobs. Arrange on plates with shaved ham, mayonnaise and sunflower microgreens.
